Mentsuyu (Concentrated All-Purpose Noodle Soup Base)
Made by a long-standing brewing company, Moribun, this Mentsuyu (Concentrated All-Purpose Noodle Soup Base) capitalizes on the umami from the company’s signature soy sauce and also from carefully selected ingredients, featuring bonito from Kagoshima, shiitake mushrooms from Ehime, kombu kelp from Hokkaido, and sardines from the Seto Inland Sea.
Bottled mentsuyu (translation: noodle sauce) typically comes in straight or concentrated. This one is the concentrated type, which is best diluted in a one-to-ratio one with water, but you can adjust its flavor intensity by changing this ratio to taste.
USES:
- cold soup for dipping soba noodles
- warm broth for dipping hot tempura
- soup broth for udon
- use as a base to build your homemade ramen broth
